Emergency Sticky Rice Steamer

So, you are scrolling around on page like Pinterest, hundreds of recipes pop up and one of them is Steamed sticky (glutenous) rice with riped mango and your stomach starts to knock. Mango is there, sticky rice is there but steamer?

No proper steamer? No hay problema!

Some people are very talented for instance, my mother. She could cook sticky rice just like the normal rice without fail, by combining rice and water and bring to boil at once. Hers always turns out perfect. When I tried the same method, it was always either very soggy and so gross or raw. Hence an easy way out for me is to use a steamer when I need to cook it and don't want to disturb my mother. Being here in the DR, I don't have one (steamer) and it doesn't make sense to order one from the States when it is only used once in a while. 

A while back, I came across a site where someone used the splatter screen as a substitute to the steamer. I have one in my kitchen so I gave it a try. It is what works best so far! Thanks for the nice idea, my credit to you!

Here how I do and how it works:

Sit your sticky rice grains in lukewarm water for at least 3 hours before steaming. Another way is to put it in cold water and leave it overnight.
 
- Once it is ready, fill half of the pot (choose pot according to the size of your splatter screen) with water and bring to boil on high flame
- Once it is boiled, turn flame to low so the water won't splash up to the rice later
- Drain the rice using the sieve. It has to be as much dry as possible
- Put on the splatter guard/screen
- Spread one handful of rice only each time. Leave some spaces around the rice batch for it will double in amount after steaming
- Cover with a big salad bowl
- After about 5-8 minutes, lift the bowl carefully and use a flat spatula to push the freshly steamed rice to your serving plate or storage
The rice should come off clean, not sticking to the screen. Super easy! Repeat with the remaining rice. Switch the flame off, go peel your mango or bring out your prepared green papaya salad and voila! Enjoy..
