Homemade Mango Ginger Jam

It is okay to blog while on holiday right? :-) After all, both are something to enjoy. I done the recipes and photos back at home so I only need to jot them down and share. Today's sweet easy recipe is inspired by Sharmis Passions Blog. While it is a mango season in the DR, it is just too sad to see the good mangoes go unused because after eating and eating and eating them fresh, at certain point, you simply can't anymore - for us at least. The only way to eat them different is to use them in a different way. Logic. My husband loves to have some fruits jam for his breakfast so on his birthday I surprised him with a jar of homemade mango jam (he insisted it is marmalade). Whatever it is called, they are all delicious preserves!

Ingredients:
Yields: 2 jars of 370g each

6 medium sized ripe magoes
4 tablespoons brown sugar
1 tablespoon grated ginger
1 tablespoon lime juice

Directions:

1. Peel and cube the magoes ( any type you like). I used two different types in the making of this jam. You can also puree the mangoes prior to cooking but I prefer to cook the cubed ones although it requires a bit longer time to stir. 
2. In a nonstick pan big enough to cover all the ingredients, put cubed mangoes, sugar, grated ginger and lime juice. Bring the pan onto the medium flame. Keep stirring and stirring. This might be the funniest part in the game. Or maybe not. But continue stirring anyway. The cubed mangoes will be cooked and 'melted'. It takes about 30 mins. The mixture at this stage will be glossy. Switch the flame off. Its consistency should be even and sloshy without being runny, or having any distinct pieces of fruits or free liquid. 
3. To preserve, in a sterilised jar, pack the hot jam in a jar and tightly close the lid. Let cool and store it in the fridge.

  1. You make so many yummy things for your family - and understand how to present and decorate in order to enhance the feeling of something special. An effort I really appreciate. Your marmalade looks great and must taste heavenly with your homemade buns.
    Good to find ways to use all those mangos we regretfully else have to abandon when we are stuffed full in the mango season.
