If you are my friends on Facebook, you might remember the status which somewhat contains my excitement in trying a new cake recipe. I mentioned no matter how the cake would turn out - good or bad, I will blog it and that's what I am going to do in a minute.
Inspired by different banana cake (some say bread?) recipes I came across, I decided to try with the grated coconut in heavy syrup because I can't imagine for now what other usages it is for. The coconut flesh is finely grated and what's in a tin is so super sweet which we don't need to use sugar in this cake recipe. What I tried turns out very good. It is soft, moist and rich in aroma. My first slice started after the third slice! :-)

Banana Cake With Grated Coconut In Syrup
Ingredients:
(yield: 1 loaf & 6 buns)

2 1/3 cups all-purposed flour
1 stick unsalted butter (softened)
1 large egg
2 ripe banana (mashed)
2 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
a pinch of salt
5 generous tbsp grated coconut in heavy syrup
Directions:
In a large bowl, mix in the flour, baking soda, baking powder, salt. In a seperate bowl, cream butter and grated coconut (stir before scooping it out off the tin because the coconut is accumulated on top, the syrup is underneath) and then egg and vanilla extract.
Meanwhile pre-heat the oven to 175°c.
Combine flour mixture with coconut butter mixture. Bate bate bate (as my children would say in Spanish for mixing) until everything is well blended and add mashed banana. Stir once more. Fill each of the silicone baking cups or paper cups with two spoons of the mixture. Pour the remaining into the greased loaf pan. Send them to the oven.
Baking time:
The buns need 20 minutes.
The loaf needs 40-45 minutes or as usual until the inserted skewer stick comes out clean.
Let it cool off before taking it out from the pan, slice and enjoy! Some (if not all) buns must be gone by now if you have children around like me. :-)
